- 2–3 boneless, skinless chicken breasts, cubed
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 1 cup chicken broth
- 12 oz fettuccine or penne pasta
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons olive oil

Instructions
Step 1: Prepare the Chicken
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat.
- Sear chicken until golden brown on both sides. Remove and set aside.
Step 2: Make the Sauce
- In the same skillet, sauté onions and garlic until fragrant.
- Add sun-dried tomatoes and cook for 2 minutes.
- Stir in chicken broth, heavy cream, and Parmesan cheese.
- Let the sauce simmer, stirring occasionally, until thickened.
Step 3: Cook the Pasta
- Boil pasta in salted water until al dente.
- Reserve ½ cup of pasta water before draining.
Step 4: Combine and Serve
- Return chicken to the skillet and let it simmer in the sauce for 3–4 minutes.
- Add cooked pasta, tossing until fully coated.
- Garnish with parsley, basil, or extra Parmesan cheese before serving.
