- 1 lb beef sirloin or tenderloin, thinly sliced

- 8 oz mushrooms, sliced
- 1 cup beef stock

- 1 tablespoon Worcestershire sauce
- 1 cup sour cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sear the Beef: In a large pan, heat the olive oil or butter over medium-high heat. Add the thinly sliced beef and cook for 2-3 minutes on each side until browned. Remove the beef from the pan and set aside.
- Sauté Onions and Garlic: In the same pan, add the chopped onion and garlic. Sauté until softened, about 5 minutes.
- Cook the Mushrooms: Add the sliced mushrooms to the pan and cook until they release their moisture and become golden brown, about 5 minutes.
- Deglaze the Pan: Pour in the beef stock, scraping up any browned bits from the bottom of the pan. Stir in the Dijon mustard and Worcestershire sauce. Simmer for 5 minutes.
- Incorporate the Sour Cream: Reduce the heat to low and gently stir in the sour cream until fully combined. Add the beef back into the pan, stirring to coat it in the sauce. Cook for another 2-3 minutes, ensuring the sauce is warm but not boiling.
- Season and Serve: Season with salt and pepper to taste. Serve over egg noodles or rice and garnish with fresh parsley.
