Instructions
- Prepare the Chocolate Crust:
Preheat oven to 350°F (175°C). Mix cookie crumbs and melted butter. Press mixture into the bottom of a springform pan and bake for 10 minutes. Cool completely. - Make the Cheesecake Filling:
In a bowl, beat cream cheese until smooth. Add sugar, eggs, and vanilla, mixing until creamy. Pour filling over the crust, smoothing the top. - Bake the Cheesecake:
Place the springform pan in a water bath and bake at 325°F (163°C) for 60-70 minutes. Let cool in the oven, then refrigerate for at least 4 hours. - Prepare the Ganache:
Heat heavy cream until steaming. Pour over chopped chocolate, let sit, and whisk until smooth. Spread ganache over cooled cheesecake. - Make Cherry Compote:
Simmer cherries, sugar, and lemon juice over medium heat until thickened, about 10 minutes. Let cool. - Assemble and Garnish:
Spread cherry compote over ganache layer. Garnish with whipped cream, chocolate shavings, and cherries.
