Instructions
- Preheat the oven to 400°F and prepare a 12-cup muffin tin with liners or cooking spray.
- Mix dry ingredients: In a large bowl, whisk together the flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt.
- Whisk wet ingredients: In another bowl, combine the eggs, milk (or apple cider), applesauce, oil, and vanilla extract.
- Combine: Pour the wet ingredients into the dry mixture and stir until just combined.
- Fold in the apples: Gently fold in the chopped apples and any optional add-ins (e.g., nuts).
- Fill muffin tins: Divide the batter evenly among the muffin cups, filling each nearly to the top.
- Bake: Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean. Let muffins cool in the tin for a few minutes before transferring to a wire rack
